Zucchini Pizza: An easy, healthy, tasty, vegi-meal for the whole family.
What you’ll need:
1 large, fresh Zucchini (almost as long as the cookie tin you want to use)
1 can tomato paste
1 8oz can tomato sauce
2 large tomatoes
1-2 large onions
½ lb hamburger or sausage
Small can Mushrooms (or fresh if you have it)
Garlic salt
1tsp Minced garlic (or one garlic clove, minced)
1 cup shredded cheese
1 packet Spaghetti or Pizza seasoning
(** pepperoni or any other pizza topping you love)
Preparation:
Slice Zucchini lengthwise like French bread. Scoop out the seeds, and place zucchini open faced on the cookie tin with the halves side by side. Sprinkle with garlic salt and put in the oven at 400 degrees.
While Zucchini is cooking, begin your sauce.
Brown hamburger in a deep sided frying pan.
As it’s cooking, dice onion and add dump it in the pan, then add teaspoon minced garlic, seasoning packet, and mushrooms.
Add tomato sauce, dice tomatoes and add to the pan.
Add tomato paste.
Stir well till bubbly hot.
Remove zucchini pan from oven.
Pour hot mixture evenly over top of zucchini.
Spread shredded cheese over top.**
(**if you want to add pepperoni or any other topping before the cheese, go for it!)
Return cookie tin to the oven for 15 minutes or until you can easily stick a fork in the side of the zucchini.
Remove from heat and slice wedges for your family. Enjoy!
