4 Large Red/Purple Onions
3 TBS Olive Oil
2 TBS Balsamic Vinegar
Slice off small root end to make a flat bottom. Cut into eighths . Toss onions in oil and vinegar. Space on cookie sheet. Pour remaining oil and vinegar over onions. Season to taste. (Salt and/or Pepper)
Bake at 425 for 30 min.
